Canning - Blueberries and Lime Jam

Whenever the frozen berries have gone on sale, I've bought a couple of bags. I love them on my breakfast granola or in a smoothie. Even my teens will blend up a banana, a handful of frozen fruit, and some yogurt. So I like to keep a good stock. But now it's time to purge, so today's task was blueberries! I made two batches of blueberry lime jam.

Blueberry Lime Jam
(based on Bernardin Guide to Home Preserving)

  • 4 1/2 cups crushed blueberries
  • 2 limes - zest and juice
  • 4 cups granulated sugar
  • 1 package Bernardin Original Fruit Pectin

I made two batches. I used the hand blender as the fruit was coming to a boil. I tried to strain the second batch but it was too gluey. Next time I'll blend and strain before starting to heat the fruit. I'd like to make it smooth. Each batch made 3 jars.
