Canning - Red Root Relish

I think this one is going to be a winner. It's from the Bernardin Guide to Home Preserving.
  • 4 cups cooked diced beets
  • 4 cups finely chopped red cabbage
  • 3 cups white vinegar
  • 1 1/2 cups sugar
  • 1 cup finely chopped onion
  • 1 cup finely chopped red pepper
  • 1 tablespoon horseradish
  • 1 tablespoon pickling salt

It made one 500 ml jar and 3 smaller widemouth jars. And it was tasty going in... we'll see how it is coming out!
